Ingredients

  • 1 cured pork loin from iberian pig (lomo ibérico de bellota)

Directions - Cured pork loin

  • Unwrap the loin.
  • Right to the cutting board.
  • Discard one of the sides of the loin. Take care, it's very expensive!!
  • Make a perpendicular cut in the hide and remove it.
  • Slice it finely and serve 2 to 4 per person accompanied with bread sticks
