Cuttlefish eggs (Huevos de choco)

Ingredients

For 4 servings
  • 10 cuttlefish eggs
  • 1 scallion
  • 2 oz (1/4 cup) extra virgin olive oil
  • 0,3 oz (2 teaspoon) sherry vinegar
  • 0,5 oz (1 tablespoon) water
  • salt

Directions

  • Wash the eggs well and cook them with salt for 10 minutes. Next drain them and let them cool down.
  • Afterwards slice the scallion and separate the rings.
  • Make a vinaigrette with extra virgin olive oil, sherry vinegar, salt and a tablespoon of water.Emulsify.
  • Finely cut the eggs and mix them the scallion rings and the vinaigrette.
  • Finally, serve the dish after decorating with parsley.
