Description

    This is the traditional and basic recipe.
    A fruity Spanish olive oil, preferably from Andalusia, is important, as is a good sherry vinegar, preferably aged.

Ingredients

6 servings

  • 2 lb ripe tomatoes
  • 5 oz cucumber
  • 1 green pepper
  • 2 garlic cloves
  • 3 oz onion
  • 6 tablespoons extra virgin olive oil
  • 2,5 tablespoons Sherry vinegar
  • 2 teaspoons salt

Directions

  • peel the tomatoes and cut the cucumber, the onion, the pepper and the garlic in pieces.
  • Put the vegetables in a container to beat and add vinegar and salt.
  • Beat them
  • Add some ice cubes and stir well
  • Serve in individual bowls, accompanied with chopped cucumber and pepper. You can also add diced serrano ham.
