Rice Pudding (Arroz con Leche)

Ingredients

6 servings

  • 4 cups milk
  • 7 oz rice
  • 4'5 oz sugar
  • 1 oz butter
  • 2 cinnamon sticks
  • 8 marie biscuits
  • 1 lemon rind

Directions

  • In a saucepan, put milk, sugar, the lemon rind and the 2 cinnamon sticks.
  • Cook at a medium heat until boiling
  • Wash the rice and drain to remove the starch
  • Add the rice and stir.
  • Cook for 50-60 mins stirring frequently to prevent the rice form sticking to the bottom of the pan.
  • When there is little milk left, remove from the heat. Take the lemon rind and the cinnamon sticks out of the saucepan.
  • Add butter and stir.
  • Refrigerate
  • Serve rice pudding in earthenware pots and decorate with cinnamon.
  • Try it with Pedro Ximenez Sherry wine. Amazing!!
