    Vegetarian version of Fabada Asturiana.

Ingredients

  • 1 lb 'Fabas de La Granja' Beans
  • 1 large onion
  • 1 large tomato
  • 2 garlic cloves
  • 1 green pepper
  • 1 teaspoon paprika
  • 2 oz extra virgin olive oil
  • salt

Directions - Vegetarian Bean Stew

  • Cover the beans with three times of water for 12 hours.
  • drain and put them in a pressure cooker.
  • Cover the beans with cold water cook on a high flame. Do not cover the pot.
  • When water begins boiling, remove the water from the pot, drain the beans and wash them with tap water.
  • Place them again in the pressure cooker and cover with cold water and add the extra virgin olive oil.
  • Add the tomato, the green pepper, the onion and the garlic, all them in a whole piece. Add the paprika.
  • Cover the pressure cooker and cook at a medium heat for 1 hour. (You can also cook in a normal pot. In that case, cook for 2:30 hours)
  • uncover the pot, take the vegetables (the tomato, the green pepper, the onion and the garlic cloves) out of the pot and beat them.
  • Pour this whipped mixture in the pressure cooker and salt the vegetarian bean stew. Reduce until the broth thickens.
  • Serve the "vegetarian bean stew"
