Wrinkled Potatoes

Description

       Traditional baked potato dish eaten in Canary Islands. They are usually served with a pepper sauce, called Mojo Picon, or with a coriander sauce called Mojo Verde.

Ingredients

  • 2 lb small potatoes (all equally sized)
  • 1 handful of salt

Directions

  • wash the potatoes well
  • put them inside a large pot with a lid
  • add water but do not cover the completely
  • add a big handful of salt, put the lid on it and cook
  • pierce them to check if cooked
  • when cooked, drain the water and place again on the heat (do no not put the lid on it)
  • stir from time to time and remove from the heat when wrinkled
  • serve them halved
  • possible to them accompany with mojo picon or mojo verde.
