Alioli Sauce (Salsa Alioli)

       Alioli Sauce: Made simply of oil, garlic, sherry vinegar and salt, this is essentially a gourmet garlic mayonnaise, a staple in Catalunya, in the north-east of Spain.

  • 1 egg yolk
  • 2 cup extra virgin olive oil
  • 2 garlic cloves
  • 1 teaspoom sherry vinegar
  • 1 teaspoon cooking salt


  • Put the yolk inside the mixer glass
  • Add 2 tablespoons oil
  • Cut the garlic cloves in half and remove the seeds
  • Put them inside the mixer glass, and add the teaspoon of vinegar and the teaspoon of salt.
  • using the stck blender, mix at high speed until the garlic is fully pured into a loose paste. then gradually, add the remaining olive oil as you continue blending at high speed until you have a rich, creamy alioli.
