Country Omelet (Tortilla Campera)

       Country Omelet: Authentic Chorizo and Peppers Spanish Omelet. Delicious.

  • 5 eggs
  • 1/2 red pepper
  • 1 green pepper
  • 2 medium-sized potatoes
  • 3 oz chorizo (pork sausage) to cook
  • salt
  • extra virgin olive oil


  • wash well the potatoes, peel and slice them
  • fry slightly but do not brown them. Then drain in paper napkin.
  • Wash the peppers and cut them in thin strips.
  • add 1 tablespoon to the pan at a medium heat
  • Add the vegetables
  • Prepare the chorizo, cut it up and add to the pan when vegetables are poached
  • Crack open the eggs and put them in a bowl with a teaspoon of salt. Them beat well.
  • When the chorizo is well cooked, remove from the heat and drain
  • add to the beaten eggs
  • Add the potatoes too and stir carefully
  • cover the base of the pan with a thin layer of oil. Add the previous mixture and cook over a medium-low heat.
  • when the bottom of the omelet is set, invert a plate over the pan and quickly turn the omelet out onto it.
  • put again the pan over the heat and add some more oil. Slide the omelet back into the pan and cook until done
  • serve country omelet in wedges
