Crisp Spiced Potatoes (Patatas Bravas)

Ingredients
For 4 servings
- 24 oz ripen tomatoes
- 1 teaspoon sugar
- 1 onion
- 2 garlic cloves
- 1 cayenne
- 1 teaspoon cayenne pepper
- black pepper
- 1 tablespoon sherry vinegar
- 2 tablespoons oil
- 2 big potatoes
- Salt
Directions
- Wash the tomatoes and grate them to peel
- chop the onion and the garlic cloves
- put 2 tablespoons oil to the pan and poach the onion.
- when the onion is poached add the chopped garlic
- When cooked, add the cayenne and the cayenne pepper
- in a minute, add the tomatoes and the sugar.
- turn the heat to high and add the vinegar
- when boiling, turn the heat down and evaporate almost all the water
- remove the cayenna and then beat
- put the mixture again in the pan for 5 minutes
- refrigerate
- peel the potatoes and cut in 0'8 inches dices
- Take a pot with water and salt, when boiling, put the potatoes inside it and boil at a medium heat for 7 minutes.
- dry them
- fry till golden brown
- serve crisp spiced potatoes and decorate with the sauce
