Crisp Spiced Potatoes (Patatas Bravas)

    Crisp Spiced Potatoes: Traditional dish from Madrid, but you can find it all over Spain. I love it!

For 4 servings

  • 24 oz ripen tomatoes
  • 1 teaspoon sugar
  • 1 onion
  • 2 garlic cloves
  • 1 cayenne
  • 1 teaspoon cayenne pepper
  • black pepper
  • 1 tablespoon sherry vinegar
  • 2 tablespoons oil
  • 2 big potatoes
  • Salt


  • Wash the tomatoes and grate them to peel
  • chop the onion and the garlic cloves
  • put 2 tablespoons oil to the pan and poach the onion.
  • when the onion is poached add the chopped garlic
  • When cooked, add the cayenne and the cayenne pepper
  • in a minute, add the tomatoes and the sugar.
  • turn the heat to high and add the vinegar
  • when boiling, turn the heat down and evaporate almost all the water
  • remove the cayenna and then beat
  • put the mixture again in the pan for 5 minutes
  • refrigerate
  • peel the potatoes and cut in 0'8 inches dices
  • Take a pot with water and salt, when boiling, put the potatoes inside it and boil at a medium heat for 7 minutes.
  • dry them
  • fry till golden brown
  • serve crisp spiced potatoes and decorate with the sauce
