Cuttlefish eggs (Huevos de choco)

Ingredients
For 4 servings- 10 cuttlefish eggs
- 1 scallion
- 2 oz (1/4 cup) extra virgin olive oil
- 0,3 oz (2 teaspoon) sherry vinegar
- 0,5 oz (1 tablespoon) water
- salt
Directions
- Wash the eggs well and cook them with salt for 10 minutes. Next drain them and let them cool down.
- Afterwards slice the scallion and separate the rings.
- Make a vinaigrette with extra virgin olive oil, sherry vinegar, salt and a tablespoon of water.Emulsify.
- Finely cut the eggs and mix them the scallion rings and the vinaigrette.
- Finally, serve the dish after decorating with parsley.

- Dry Sherry wine (Manzanilla).
- White wine (Albariño)
