Dressed Carrots (Aliño de Zanahorias)

Video recipe - Dressed Carrots


  • 1 lb carrots
  • 2 garlic cloves
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 2 teaspoons salt
  • 2 tablespoons chopped parsley
  • 5 tablespoons extra virgin olive oil
  • 1 tablespoon sherry vinegar (If it is not sherry vinegar, 2 tablespoons)

Directions - Dressed Carrots

  • Scrape and wash the carrots
  • On a high flame, put a large pot with water and some salt.
  • Prepare 2 teaspoons of salt, peel the garlic cloves, 2 teaspoons of paprika, 2 teaspoons of cumin and 2 tablespoons of parsley. Place them inside the mortar and then crush.
  • Prepare a bowl to place the carrots, and, over them, pour the dressing, the vinegar and the extra virgin olive oil.
  • Cover them with water and refrigerate.
  • Serve Dressed Carrots cold
