Elaborated Tapas
Spinach with Chickpeas (Espinacas con Garbanzos)
Traditional tapa available in every bar in the South of Spain, though it's thypical in Lent and Easter Week.
Grilled Mushrooms (Champiñones a la plancha)
Few recipes taste more Spanish than champiñones a la plancha (grilled mushrooms), dripping with olive oil, garlic and dry Sherry Wine.
Crisp Spiced Potatoes (Patatas Bravas)
Traditional dish from Madrid, but you can find it all over Spain. I love it!
Galician Pie (Empanada Gallega)
A large two-crusted savory pie from Galicia. It's typically filled with ham or chorizo, red peppers, tomato and onion.
Pedro Ximenez Pork Loin (Solomillo al PX)
The quality of the sherry really makes this dish.
The complex flavours of PX make a wonderful sweet sauce to complement this roasted pork.
Flamenquin Cordobes
Long roll of pork steak, fried in breadcrumbs, stuffed with serrano ham and served with salmorejo. (find salmorejo recipe here)
Wrinkled Potatoes (Papas Arrugas)
Traditional baked potato dish eaten in Canary Islands. They are usually served with a pepper sauce, called Mojo Picon, or with a coriander sauce called Mojo Verde.
Croquettes of Andalusian Stew (Croquetas de Puchero)
The Andalusian stew croquettes mix two Spanish classics together to form a delicious ball of well, fried stew. Much better than it sounds, believe me.
