Galician Pie (Empanada Gallega)

Galician Pie: A large two-crusted savory pie from Galicia. It's typically filled with ham or chorizo, red peppers,tomato and onion.

Ingredients

- 10 oz hard wheat flour.
- 1 egg
- 2'5 oz butter
- 2 oz milk
- 0'7 oz pressed yeast
- 1 teaspoon of salt
- 4 oz tomato.
- 1 large onion
- 1 teasp smoked paprika
- 2 large red peppers
- 3 tablespoons oil
- 7 oz cured serrano ham or chorizo
- 2 teaspoons of salt
Directions
- Wash the vegetables and cut the peppers and the onion in julienne.
- Pour 3 tablespoons oil to the pan at a medium heat.
- Add the peppers, the onion, the paprika and 2 tablespoons of salt. Then poach.
- Peel and chop the tomato, and when the pepper is poached, add it and the cured ham as well. Then cook for 6 minutes.
- remove the pan from the heat and let cool down.
- In a bowl, place 3 oz flour leaving a gap in the middle.
- dilute the yeast in 4 tablespoons of lukewarm water and pour the flour inside the previous gap and knead it perfectly. the dough must be more or less dry but compact.
- when the dough is ready, place it in a bowl full of lukewarm water and when it floats up then it's done.
- place in another bowl 7 oz of flour with a gap in the middle
- add the beaten egg, the milk, the melted butter and a teaspoon of salt
- knead well, it should be a soft dough
- mix together both doughs and knead perfectly( very important let rest for about 1 hour
- brush the oven try with oil
- add a thin layer of flour to the tray
- divide the dough in two pieces?? and then roll one part of the dough over the oven tray
- roll the other part of dough and cover the filling.
- spread the filling mixture over the dough (use a fork)
- preheat the oven at 356F for 15 minutes
- Brush the surface of the pie with beaten egg
- Bake the pie at 356F for 20 minutes
- Grill Galician Pie for 10 more minutes
- Serve Galician Pie in hot or warm portions.
