Grilled Mushrooms (Champiñones a la Plancha)
Description
Grilled Mushrooms: Few tapas taste more Spanish than champiñones a la plancha (grilled mushrooms), dripping with olive oil, garlic and dry Sherry Wine.

Ingredients
4 servings
- 1 mushrooms tray
- 4 garlic cloves
- 1 handful of parsley
- 1/4 cup Oloroso Sherry wine (try it also with Fino Sherry wine, amazing!)
- 1 lemon juice
- 1 teasp cooking salt
- 2 tbsp olive oil
- 1 thick slice cured ham
Directions
- wash the mushrooms, cut the stems and discard them
- Chop the garlic and add to the mortar
- chop the parsley and add them as well
- grind
- add the wine, 1 tbsp of oil and some salt. Then stir.
- To the pan, add 1 tbsp of oil
- Turn the mushrooms upside down and cook over a medium-high heat
- pour over them half mixture grinded in the mortar
- turn them again when browned
- add the remaining half of the grinded mixture
- add the minced ham over it
- serve grilled mushrooms in small earthenware pots accompanied with Alioli sauce (optional but recommended)
