Grilled Mushrooms (Champiñones a la Plancha)

       Grilled Mushrooms: Few tapas taste more Spanish than champiñones a la plancha (grilled mushrooms), dripping with olive oil, garlic and dry Sherry Wine.

4 servings

  • 1 mushrooms tray
  • 4 garlic cloves
  • 1 handful of parsley
  • 1/4 cup Oloroso Sherry wine (try it also with Fino Sherry wine, amazing!)
  • 1 lemon juice
  • 1 teasp cooking salt
  • 2 tbsp olive oil
  • 1 thick slice cured ham


  • wash the mushrooms, cut the stems and discard them
  • Chop the garlic and add to the mortar
  • chop the parsley and add them as well
  • grind
  • add the wine, 1 tbsp of oil and some salt. Then stir.
  • To the pan, add 1 tbsp of oil
  • Turn the mushrooms upside down and cook over a medium-high heat
  • pour over them half mixture grinded in the mortar
  • turn them again when browned
  • add the remaining half of the grinded mixture
  • add the minced ham over it
  • serve grilled mushrooms in small earthenware pots accompanied with Alioli sauce (optional but recommended)
