    Marinated Olives: You will find them in every bar in Spain

  • 4 lb olives
  • 4 teaspoons paprika
  • 4 teaspoons oregano
  • 3 garlic cloves
  • salt


  • Wash the olives
  • Prepare the mortar and pestle
  • Mash one by one
  • cover them with water and change the water twice a day during a week.
  • they will be ready when you try them and they are not bitter
  • In a container. put 3 garlic cloves and 2 teaspoons of paprika
  • add the olives
  • and then 2 more teaspoons of paprika and oregano
  • cover with water with salt (3 oz salt every 4 cups water)
  • Preserve in a non-metallic container
  • in a week, they will be more or less marinated
  • serve without using metallic cooking utensils
