Mojo Picon
Description
Mojo Picon originated in the Canary Islands, this sauce is used to top potatoes. This sauce is very spicy, and is a delightful addition to any meal.

Ingredients
- 2 cayenne peppers
- 4 garlic cloves
- 1/4 cup olive oil
- 1 teasp vinegar
- 1/3 cup of water
- 1 teasp spicy paprika
- 1/2 teaspoon cumin
- 1 teaspoon cooking salt
- 3 slices no-crust bread
Directions
- soften the cayenne peppers in hot water for several minutes
- to the mortar, add the chopped garlic, the spicy paprika, the cumins, the cayenne peppers and the cooking salt.
- grind well
- then add the vinegar, the olive oil, the bread and the water. Stir until well mixed.
- serve in a bowl
- perfect to accompany wrinkled potatoes.
