Oven Baked Gilthead (Dorada al horno)

    Oven Baked Gilthead: Great recipe to be accompanied by a great Sherry Wine: Manzanilla

For 4 servings

  • 2 giltheads weighing 3/4 lb each
  • 3/4 lb potatoes
  • 1 green pepper
  • 2 red tomatoes
  • 1 onion
  • breadcrumbs
  • salt
  • pepper
  • Extra Virgin Olive Oil
  • Olive oil for cooking


  • Ask the fish dealer to gut the fish. Wash them with tap water and season them with salt and pepper. Slice the potatoes and fry them in plenty of olive oil for cooking (do not brown). Drain in a paper napkin.
  • Wash the vegetables and slice them.
  • Preheat the oven to 330F for 15 minutes.
  • Grease the oven tray with olive oil and put the potatoes, the tomatoes with some salt, the onion rings and the green pepper on it.
  • Over the vegetables, place the giltheads, season with salt and pepper and pour some extra virgin olive oil over them.
  • Sprinkle with breadcrumbs, bake at 330F for 30 minutes and grill the last 10 minutes.
  • And finally serve hot the oven baked gilthead
