       Spanish Potato Salad: Typical summer potato salad, found in a 99,9% bars in Spain.

  • 1 lb potatoes
  • 1 large carrot
  • 2 eggs
  • 2 oz drained tuna in olive oil
  • 12 oz mayonnaise
  • 6 pitted olives
  • 1 sweet red pepper
  • salt


  • Wash the potatoes and the eggs
  • To a saucepan, add water and 1 tbsp salt and boil.
  • Add the potatoes and the eggs.In 10-12 minutes, remove the eggs. Remove the potatoes when cooked.
  • Peel the eggs and divide the yolk and the white.
  • To a bowl, add the chopped white and the chopped carrot raw and crunchy (I love it this way) or cooked and soft)
